2008 Alice Desert Festival’s Annual Competition this year judged by Stephanie Alexander has been won by Anna Szava, Co-Abundance partner and inspirational Chocolatier!


Anna’s creation melds the strength and earthy heart of Kalkardi (wattleseed) with aromatic delicacy of hazelnut and Mallee honey, all wrapped in rich chocolate spiced with native mountain pepper.

Anna Wins Alice Springs 2008 Desert Festival Bush Foods Recipe Competition

Kalkardi Mignonnes

The Winning Kalkardi Mignonnes Recipe


120 g    hazelnuts, toasted and skin removed

4 Tbsp         sugar

5 Tbsp         Kalkardi (Acacia Colei) seed, toasted and roughly ground with mortar and pestle


Mix in a food processor, until hazelnuts are chopped to small grain


2 Tbsp         Mallee honey

2 Tbsp         hot water, mix with honey

In a mixing bowl mix Kalkardi and honey mixture with a fork, then knead it into a ball.  Cover with plastic and refrigerate for at least two hours, or overnight.


After that form 1 tsp size bits into small balls, and put them back in the fridge.


100 g excellent min. 70% dark chocolate

1 dozen  Tasmanian Mountain Pepper berries, ground in mortar and pestle and sieved


Melt chocolate over hot water bath, mix in the fine grounds of the Pepper berries.  Coat the Kalkardi balls with the chocolate and let them cool for a few hours before refrigerating.
