hillside with mostly eastern and southern slopes & part of the Northern Mt Lofty Ranges on the edge of Burra SA

elevation 460 - 530 metres above sea level

low rainfall organic production is hard work! adopting old and tired soils, a barren hillside, from previous land use overgrazing sheep; now transformed with thousands of native trees, regenerating native grassland and of course our developing food forest: olives now & soon to be producing pistachio, capers and carobs


organic olive fruits from mostly italian tuscan varieties of frantoio, leccino, moraiolo, pendolino, hand picked from autumn & winter and pressed locally to yield fresh, vibrant & robust flavours in our extra virgin olive oil - use liberally for taste & health! 


purple/black fully ripe kalamata olives hand picked and slow natural fermentation in brine produce great texture and enhanced flavour, just taste the difference!
